Our elf Chuckles finally made it back from the North Pole! He was delayed by a bathroom remodel at Santa's Workshop...we are also having a bathroom remodel...what a coincidence!

Our day was very busy, we started basketball at church as well. It's Troys fourth year (whoa I can not believe that!) and Kaelins first year. Basketball is kind of the family sport on my Dads side of the family, so I love cheering my kiddos on from the bleachers, and possibly living vicariously through them.
Between basketball, ice skating, and Christmas concerts this week we have no time for big dinners. Since I am doing a lot of basic dishes I thought I would make one of my families favorite desserts for them. It's easy and so yummy, and it lasts us a few days of snacking! Bonus, you can get all of these ingredients at Aldi as well!
Chocolate Peanut Butter Bars
Ingredients
1/2 cup semi-sweet chocolate chips
One package from a box of graham crackers
1 cup of heavy cream
1 1/2 cup confectioners sugar
salt
1 stick of melted butter
1 cup peanut butter

Start by turning your graham crackers into crumbs. I don't stress about getting the crumbs super fine. Too be honest I don't want to mess with dragging out a food processor so I use my Pampered Chef Mix and Chop.
Throw in your confectioners sugar, a pinch of salt, peanut butter, and melted butter
Spray a medium sized dish with non-stick spray and press this mixture into the bottom. Maybe you're better at this than me but mine is never perfectly flat, and my kids and husband have never once mentioned that between bites.
Now you can leave this on the table and pour your heavy cream into a sauce pan. Heat it until the edges are bubbly.
While that's heating take your chocolate chips and pour them into a bowl with a sprinkle of salt
Once your cream is hot enough, pour it onto your chocolate chips, let it set a moment, and then whisk until it's smooth

Pour your chocolate gnache onto your peanut butter crust and refrigerate anywhere from an hour to overnight. This time when I made it it took overnight to get the chocolate to completely set, but my family couldn't wait and had a sneak snack while we were decorating the tree.
It really was such a busy day, but these bars made for a nice treat at the end of it. I though about throwing some sprinkles on the top for the kids, or some sea salt for the husband and I. What would you top it with?
